Food & Wine in Ferrara
Delicious traditional recipes are always the protagonists of celebrations, dances and tablefuls, such as the praised Salama da Sugo, a sausage with a strong and definite aroma, accompanied by mashed potatoes or pumpkin, which is a memorable and unique experience.
Among the first courses the famous cappelletti, a variant of tortellini which can be found almost everywhere in Italy, but that will unlikely have the same taste. Furthermore, let's not forget the traditional cappellacci, filled with pumpkin and parmesan cheese and still today hand made with hand-rolled dough and dressed with ragù (meat sauce), or butter and sage.
A tasty reminder of the city is its famous bread, called coppia, with its four little crunchy horns and soft core, always present on tables in Ferrara. It has ancient origins, dating as far back as a Ducky of Este's cook and today is one of the PGI (Protected Geographical Indication) products.
In Jolanda di Savoia, in August, it is time to celebrate the Giornate del Riso (Rice Days) dedicated to the Po Delta's PGI rice, which flourishes in the lands of recent reclamation: the most common varieties are baldo, arborio, carnaroli, and volano. Eating at a Festival table means participating, even for just a day, to the history of a community that once a year celebrates itself and its symbols.
