Cervia Sweet Salt
Cervia, over the centuries, focused its socio-economic development on the production of "white gold" (salt) originating from the ancient salt mines. Salt once held strategic value since it was used both as currency (hence the term "salarium") and for storing food.
The product typical composition, for 1 kg of salt, is the following:
Sodium Chloride 97.5 g - Humidity 2.0 g - sulphate 250.0 mg - calcium 60.0 mg - magnesium 60.0 mg - potassium 40.0 mg - strontium 3.0 mg - manganese 0.2 mg - zinc 0.15 mg - fluorides 0.15 mg - lithium 0.03 mg - copper 0.03 mg.
This salt is collected then simply washed and whirled and it preserves the entire richness of seawater oligoelements. Its natural humidity (2%) is typical of integral sea salt.
Cervia salt is recognized also as "sweet" salt due to its sodium chloride purity and the absence of more bitter salts, normally contained in seawater.
Since the 2004, it has been recognized as a Slow Food protected product and it is used in the kitchen and in cosmetics.
Salts with aromatic herbs, organically grown and well dosed, are particularly appreciated.
